Taramo Salad, Cod Roe Potato Salad

You find canned cod roe most likely at a Russian market. Potato salad with cod roe is called Taramo salad, a popular side dish in Japan.

INGREDIENTS
  • canned cod roe 30 g
  • mayonnaise 50 g
  • vinegar (5%, the vinegar sold in Finland is 10%, so half the amount) 10 g
INSTRUCTIONS
  • Mix all seasonings together.
  • Finely chop the spring onion.
  • Peel the potatoes and cut into large pieces.
  • Heat the potatoes in the microwave until they are soft enough to be easily skewered.
  • Coarsely mash the potatoes.
  • Add spring onions and seasonings, mix well and serve.
NOTES
This salad is called Taramo salad. The term is a mixture of tarako = cod roe, and imo = potato. It is a very popular dish in Japan, and can be eaten at izakaya (a Japanese pub) or bought at convenience stores.
"You can get canned codfish at the Russian Market!" It became a hot topic on Twitter a while ago. My friend gave me some, so I tried this and that, including Mentaiko style.
When I got some cod roe, I wanted to make Taramo salad. I once had some cod roe mayonnaise sent to me from Japan because I really wanted to eat cod roe (of course, I don't recommend it because it requires refrigeration), but I remember being very disappointed because the taste didn't please my desire for cod roe.
You can make Tarako pasta with IKEA's paste, but I thought it would not be suitable for Taramo salad because of its strong sweetness,. When I heard that you can buy canned tarako and got my hands on it, I quickly made it. I am grateful for the taste of Japan that is available overseas.
