Mentaiko Spicy Cod Roe

Mentaiko, spicy cod roe is a refrigerated product and difficult to buy outside Japan. I pickled canned cod roe and made mentaiko by myself.
INGREDIENTS
- canned cod roe 50 g
- dashi powder 3/4 teaspoon
- soy sauce 2 teaspoon
- brown sugar 2 teaspoon
- water 2 teaspoon
- red pepper (powdered one is the best, but coarsely ground one is ok) 1/4 teaspoon
INSTRUCTIONS
- Put all ingredients in a clean container and mix well.
- Cover with a lid and let sit in the refrigerator for at least half a day.
- Serve on white rice.
NOTES
Mentaiko is cod roe marinated spicy. It is made in Japan, especially in Fukuoka, and is a very popular ingredient, eaten with rice or used in cooking. I love mentaiko, but it is almost impossible to buy in Finland. It is a refrigerated product, so you can't even have it sent from Japan. I tried to fool myself and please my craving for mentaiko by eating cod roe pasta. However, on Twitter, I heard about canned cod roe being sold at a Russian market. My friend gave me some of those cans sold there as a gift. Thank you. Of course, the cod roe pasta, the cod roe and potato salad made from those were delicious, but the most satisfying thing I made was this mentaiko. I can't describe the joy I feel when I am able to reproduce those Japanese ingredients that are not available overseas in a delicious way.
