Dashi Simmered Bamboo Shoot

Japanese style dashi simmered bamboo shoot with easy to find canned boiled bamboo shoot. Simple and easy dish to make. Great for bamboo beginners.
INGREDIENTS
- bamboo shoots (canned boiled one, net) 300 g
- dashi soup stock (reference dashi soup recipe is here) 300 mL
- soy sauce 3 tablespoon
- brown sugar 2 tablespoon
INSTRUCTIONS
- Drain water from bamboo shoots and cut into bite-size pieces.
- Add seasonings to dashi soup and heat over medium heat.
- When the dashi soup comes to a boil, add the bamboo shoots and simmer for about 5 minutes.
- Cool slowly to allow the flavors to soak in and serve.
NOTES
Have you ever cooked raw bamboo shoots? They have are strong with lye and need to be preboiled in water with rice bran. This is a very time-consuming process. If you use canned bamboo shoots, you can easily cook them, although the texture is not as good.
