Japanese mussel rice

Mussel is the most common shellfish in Finland. Cooking mussels and rice with dashi is easy and delicious.

INGREDIENTS
INSTRUCTIONS
  • Put rice and dashi soup in a pot and leave it to rest for at least 30 minutes or more.
  • Add soy sauce and mix well.
  • Put frozen mussels on without mixing and put the lid on. Heat with middle heat.
  • There will appear a soft boiling sound after a while, wait until the boiling sound stops and turn off the heat.
  • After cooking, mix it and it's good to wait a little, like 10 minutes, before opening the lid.
NOTES
●In Japan, asari clam is one of the most common seashells. We steam it with sake, put in miso soup and cook with rice. In Finland, I couldn’t find asari clam. I wanted to eat asari rice, so I tried to cook it with mussels. Guess what, ALMOST SAME! It’s so delicious and
my Japanese friends loved it.
●When I cook mussel rice, I use Japanese rice.
