Fresh salmon is readily available in Finland. However, in other words, the only thing that is easy to eat is salmon. To change the taste a bit, I made this pickled salmon.
I always buy whole salmon, and make sashimi and make this zuke. You can also buy whole salmon fillets. However, they cost about three times as much as whole salmon.
There are many ways to enjoy zuke: as sushi with sushi rice, as zuke don on rice, or as sashimi. Juhani says that he prefers zuke to regular sashimi.

Zuke, Soy Seasoned Salmon Sashimi, without Mirin, Sake
Zuke is pre-seasoned sashimi with soy sauce. You can make zuke with salmon, tuna and so on. Zuke nigiri and zuke don is so great!
Let sit in the refrigerator for at least 30 minutes to soak up the flavor.
NOTES
Pre-seasoned sashimi with soy sauce is called zuke. Tuna, salmon, and many other fish can be seasoned as zuke.A bowl of rice topped with zuke is called a zuke-don, sushi with zuke is called zuke-nigiri.Substitute brown sugar for mirin and omit sake.
