Zuke, Soy Seasoned Salmon Sashimi, without Mirin, Sake


Fresh salmon is readily available in Finland. However, in other words, the only thing that is easy to eat is salmon. To change the taste a bit, I made this pickled salmon.

I always buy whole salmon, and make sashimi and make this zuke. You can also buy whole salmon fillets. However, they cost about three times as much as whole salmon.

There are many ways to enjoy zuke: as sushi with sushi rice, as zuke don on rice, or as sashimi. Juhani says that he prefers zuke to regular sashimi.

Zuke is pre-seasoned sashimi with soy sauce. You can make zuke with salmon, tuna and so on. Zuke nigiri and zuke don is so great!

  • salmon 200 g
  • water 50 g
  • soy sauce 1 Tbsp
  • brown sugar 1 Tbsp
  • sesame oil 1 tsp
  • dashi powder 1/4 tsp
  • Slice or dice the salmon.
  • Mix all seasonings together.
  • Add salmon and mix well.
  • Let sit in the refrigerator for at least 30 minutes to soak up the flavor.
