What to make with beef tongue?

In Finland, whole beef tongue is sold in its entirety. You can’t find it everywhere, but you can usually find it in a well-stocked supermarket. The beef tongue is usually unsold and has a discount sticker on it. As a discount hunter, I’m always on the lookout for them, but here’s a question. How do Finns eat beef tongue?

Takes Lots of Time

I asked Juhani about it, and this is the recipe he gave me. Slowly cook the beef tongue with simple seasonings. The accompaniment is mashed potatoes. However, it is a very time-consuming recipe, so it is not made very often these days. Juhani’s mother is a very good cook and made many dishes for him, but he said he had only eaten this dish a few times.

Even it takes long time, it has value to try. The skin of the boiled beef tongue came off very easily. Another point is that since it is boiled with the skin on, there is no need for complicated preparation. The best part is that the slow-cooked beef tongue is tender enough to be cut with chopsticks. INGREDIENTS
  • beef tongue (with skin) 1000 g
  • water
  • onion 200 g
seasoning
  • salt 1 Tbsp
  • bay leaves 3
  • allspice (whole) 1 tsp
  • white pepper (whole) 1 tsp

INSTRUCTIONS
  • Adjust the salt according to the amount of water. I use 1 tablespoon in 4 liters of water, making it thin.
  • If you don’t have whole allspice and white pepper, you can add the powdered ones after thoroughly removing the bitterness.
Cooking
  • Cut the onions into wedges.
  • Rinse the beef tongue well with water to remove any slime.
  • Place the beef tongue in a pot and add enough water to cover it. If it does not fit in the pot, cut the beef tongue into two or three pieces.
  • Place the pot over high heat and remove all the lye.
  • When the lye is gone, add the onion and seasonings, and lower the heat.
  • Simmer for 2-3 hours, checking occasionally to make sure the beef tongue is submerged in water.
  • After two hours, the beef tongue will be firm and crunchy; after three hours, it will be tender and can be cut with chopsticks.
  • Remove the boiled beef tongue while it is still hot, and peel off the skin. Use chopsticks or tongs to grip the skin.
  • Slice it into pieces about 1cm thick and serve.
  • Beef tongue has a lot of fat, so if you want to eat it lightly, this dressing is recommended.
