How to Prepare Pork Heart – Easy and Tasty Offal


Here is how to prepare pork hearts. The heart does not smell and does not require milk. Just drain the blood with water and you are good to go.


I Love Offal

I love offal, or guts, and I try and eat it this way and that in Finland. For example, giara from a Middle Eastern market, pork large & small intestines from an Asian market, etc.

I also often cook easily available pork hearts and pork kidneys. Here are some tips on how to process various offal and how to get rid of the smell.

Preparation of Pork Heart

Rinse under Running Water

Pork hearts sold in supermarkets have a large slit in the middle.

This means that it has been roughly drained of blood. But, there are still clots of blood in some places.

First, remove these clots of blood by hand and wash well under running water.

Cut into Pieces

Next, cut the well-washed heart into chunks. I usually cut it into 8 pieces.

If you look at the cross section of the cut, you will see that there is still some blood in the small blood vessels. I recommend cutting them into pieces to ensure that this blood is drained out.

Place in Cold Water

Finally, soak the cut hearts in cold water to remove the blood. Let them soak for about 20-30 minutes. If the room temperature is too high, place the heart in the refrigerator.

How many times you bleed depends on the condition of the heart. But I think one 30-minute soak is sufficient.

Of course, the heart is a mass of muscle and has many small blood vessels. Therefore, it is not possible to drain the blood completely, and if you change the water, blood will come out each time. However, I tried changing the water several times, and after the second time, very little blood came out.

No need for milk

It says to soak it in cold water, but is it necessary to soak it in milk? The reason we use milk to prepare the offal is to get rid of the smell. And the heart does not smell at all. Therefore, there is no need to treat the heart with milk unless it is very stinky.

For Stewing, Stir-frying, and Barbecuing

Once the heart has been prepped, you can use it as it is in cooking. We find it very easy to prepare, and cook it quite often. And the heart does not smell at all. Even people who don’t like offal can enjoy eating it.

I like to cut it a little thicker and make a stir-fry with pork heart and vegetables. It is also delicious stewed pork heart with tomatoes. I hope everyone enjoys pork heart.
