It makes me sad that summer is over. But in Finland, Christmas is finally here! In the middle of September, you can already find Christmas products in the candy section of the supermarket.

Gingerbread is an indispensable part of Christmas. Finnish recipes often use gingerbread spice mix for many bakings. Of course, this spice is so familiar that it can be bought in any Finnish supermarket, but it is hard to find in Japan. However, it is easy to make by simply mixing a few spices.

Gingerbread spice is used in Finnish and European recipes. If you can’t buy it, you can easily make it by mixing a few different spices.

  • cinnamon 2 tsp
  • ginger 1 tsp
  • cardamom 1 tsp
  • cloves 1 tsp
  • sevillian orange peel (if available) 1 tsp

NOTES
Different manufacturers, and different families, use different spices and mixtures. Some don’t have sevillian orange peel, some don’t have cardamom, and so on. Find the proportions that you like.
