When I was in Japan, I used to use mentsuyu often, for flavoring soups and many foods. You can buy Japanese mentsuyu in Finland, but of course it is a very expensive product.

Even so, I used to buy mentsuyu because it was necessary, but recently I realized that I haven’t been using it at all. Of course, it’s because the dishes I make have changed, but more importantly because I realized that I can substitute mentsuyu.

Japanese Noodle Soup Mentsuyu, Tempura Dip Tentsuyu without Mirin, Sake

This is a recipe for Mentsuyu and Tentsuyu, Soba, Udon and Tempura dipping soup without mirin or sake. You can use both dashi soup and dashi powder.

3 Times Concentrated Mentsuyu(*1)
  • water (*2) 50 mL
  • soy sauce 2 Tbsp
  • brown sugar (*3) 1 Tbsp
  • dashi powder (*2, *4) 1/2 tsp
Mentsuyu, Dipping Soup for Noodles
  • water (*1) 150 mL
  • soy sauce 2 Tbsp
  • brown sugar (*3) 1 Tbsp
  • dashi powder (*2, *4) 1/2 tsp
Tentsuyu, Dipping Soup for Tempura
  • water (*1) 100 mL
  • soy sauce 2 Tbsp
  • brown sugar (*3) 1 Tbsp
  • dashi powder (*2, *4) 1/2 tsp
