They Are All PIE

In my mind, this recipe is a cake, but Juhani says that Mustikkapiirakka = “blueberry pie”. But what I made before was Mustikkapiirakka, too. He said yes, and, that one used rahka, so Mustikkarahkapiirakka = “blueberry pie with rahka”.

OK, all of them are PIES. It is still a cake in my opinion, though.
The recipe, I baked in cake molds to make it look pretty. In Finland, however, we bake a lot, pouring 2-3 times this amount into a baking pan. It’s not a fancy cake, but more of a snack cake. Finns make a lot of cinnamon rolls and pies at once.

INGREDIENTS
  • milk (not fat free) 100 g
  • vinegar (5%) 10 g
  • brown sugar 10 g
  • egg 1
  • vanilla essence
Crumble
  • butter 75 g
  • strong flour 150 g
  • brown sugar 50 g
  • baking soda 1 tsp
Topping
  • blueberries (or raspberries, frozen is OK) 100 g
EQUIPMENT

  • 21cm cake mold
  • cookie sheet
INSTRUCTIONS
Preparation
  • Preheat the oven to 200°C.
  • Line a cake pan with a cookie sheet.
Crumble dough
  • Melt the butter.
  • Mix the melted butter with the flour, brown sugar, and baking soda. When the mixture becomes a lumpy mass, stop mixing. Some of the mixture will be added to the dough later.
