Easy Carrot Cake with Lots of Spices

I fell in love with carrot cake in Finland. This carrot cake is not too sweet, full of carrot, nuts and spice, and easy to cook!

INGREDIENTS
  • brown sugar 100 g
  • olive oil (or vegetable oil) 100 g
  • egg 2
  • ginger 10 g
  • vanilla essence a few drops
flour
  • flour (*2) 175 g
  • baking powder 5 g
  • baking soda 5 g
  • cinnamon 5 g
  • salt 2 g
filling
  • carrot (net) 300 g
  • pecan nuts (or walnuts) 50 g
  • fine shredded coconut 25 g
frosting
  • cream cheese 100 g
  • powder sugar 50 g
  • lemon juice 2 g
decoration
  • pecan nuts 10 g
EQUIPMENT
  • cake pan*1
  • cookie sheet
  • bowl
  • silicon spatula
INSTRUCTIONS
Preparation
  • Preheat the oven to 200℃.
  • Grate the gourd.
  • Using a slicer or cheese grater, finely shred the carrots.
  • Coarsely crush the pecan nuts for the filling and decoration.
  • Place a cookie sheet on a cake pan.
Making the Dough
  • In a bowl, combine brown sugar, olive oil, egg, ginger, and vanilla extract and mix well.
  • Add the flour and mixing well.
  • Add the carrots and nuts and mix well.
  • Pour the mixture into the molds.
  • Bake in the oven for 30-40 minutes.
  • Stick a bamboo gourd into the dough to make sure it doesn’t stick, then finish baking.
  • After baking, remove from mold and let cool.
Making the frosting
  • Bring the cream cheese to room temperature and knead well.
  • Add powdered sugar and lemon juice, and knead well.
Finish up
  • Spread frosting on cooled dough.*3
  • Sprinkle with pecan nuts and serve.*4
NOTES
*1 With this amount of dough, if made in a 20cm diameter baking pan, it will be about 6cm thick. It looks like a real cake and is very satisfying to eat and look at.
