The enzymes in sweet potatoes work best at 70-80℃. If the temperature is too low, the enzymes will not work properly. If the temperature is too high, the enzymes will not work even if the temperature is lowered afterwards.
To prevent the enzymes from being inactivated even if the temperature is slightly higher than the set temperature, the recipe calls for 70℃. Use a thermometer to measure the exact temperature.
Enjoy Sweet Potato Overseas

This process makes sweet potatos sweet. The standard time is 2 hours for a sweet potato about 7 cm in diameter and 20 cm long. For larger sweet potatoes, increase the time. Returning the temperature to 70℃ afterwards will not sweeten them additionally.
